I just wondered whether a data-logger version could be an option? I could download stored data weekly, perhaps by plugging in a USB stick; that would be fine.

That would be perfectly doable.
Without hardware modification, by using the wifi only version.
We change the software to add an option "Store locally, don't send". I have plenty of flash memory to store data.
When you want to get the data, connect to the scale via wifi with a smartphone (or tablet, laptop), and grab the data.
You think there is no network at all (gsm nor sigfox) where you have your hives?
